Red Hat's "Smackdown Soup"
4 Chicken Bouillon Cubes
1 Qt. water (3 cups if you want it a little thicker)
1 Can of your favorite barley pop(beer)
1 Cup diced celery
1 Cup diced onion (optional)
1 Cup diced carrots
2-1/2 Cups cubed raw potatos(skins & all)
2 Cans cream of chicken soup
1 Pound of cubed Velveeta cheese
Cook the water, bouillon cubes, beer celery (onion if desired) COVERED for about 20 minutes on medium to medium-high heat.
Add the potatos and carrots, cook until tender. If you want faster soup, cook the potatos and carrots in the microwave for a minute or two first, then drop them in.
When the potatos are tender, add the cream of chicken soup and cheese. Heat until the cheese is melted and the soup is hot over medium heat. DO NOT let it boil!! It'll burn and taste yucky! Chopped ham can be added as well if you like.
Makes 4 quarts (about 8 servings) and freezes really well.
